Hey guys! I hope you’ve all had a great weekend. I’ve been reveling in some must needed rest and relaxation after a tiresome week.
Before leaving for work yesterday I fitted in some yoga from Yoga Download.com and an awesome ab and core workout. My abs have been getting some serious work out time recently with my Spin Core classes, Body Pump and my own ab work- hopefully I will be seeing the results soon! 😀 This morning I set out for a very early run. I ran 8.09 miles in 1 hour 26 minutes. The first 5 miles were relatively easy, but after that my legs began to tire a little. I’m so happy that I made it that far though, despite my slower pace compared to my shorter runs where I’m hovering around the 10 miles a minute. I feel that my endurance on my longer runs has come on in leaps and bounds though, 9 miles is my target next week.
I’ve enjoyed some really delicious eats this weekend, enjoying being able to have the time to create some yummy things to eat. I will never take my time in the kitchen for granted again as I’ve really missed it this week. My breakfast yesterday was a mix of my hot oat blueberry smoothie and my .
*Berry Burst Cookie Dough Smoothie*
To make this I first made warm oats by mixing 1/2 cup of oats, 2 tbsps of wheat germ, 1 tbsp of chia seeds, 2 tbsps of peanut flour with 1 1/2 cups of homemade almond milk, 1 cup of water. Once cooked I blended it all up with some blueberries, blackberries, raspberries and strawberries…yum! Toppings included a raw cacoa brazil nut bliss swirl, omega mixed seeds and mixed dried fruit and nuts.
Breakfast this morning was another smoothie with some toasted amaranth and quinoa rye bread topped with peanut butter and my favourite morello cherry jam.
The smoothie was a mix of rice milk, water, papaya, a frozen banana, a nectarine, acai and pomegranate coconut water and hemp protein…so good!
On both days I’ve had salads for lunch:
This one was a amix of whatever I had leftover in the fridge as I was in desperate need to go food shopping. So in went mixed leaves, watercress, sweet potato, avocado and some edamame beans. I made a lovely dip using butter beans, tahini, cumin and lime juice. It was a really nice alternative to hummus and added crunch came in the form of some .
Today’s salad was a new one for me owing to the face that I added macerated strawberries that I had left standing in a dressing made from balsamic vinegar, canola oil and black pepper…
This also included, mixed leaves, a spring onion, red peppers and goats cheese. I also added some fresh chopped parsley to the mixed salad leaves for some extra flavour. I do like a bit of herbage in my salads.
I loved this salad! It’s probably one of the nicest salads I’ve enjoyed in a while. The creamy goat’s cheese with the sweet and now acidic strawberries was DIVINE! My tummy was very happy after this. 😀
For dinner tonight I made a wholewheat fusilli dish using chestnut mushrooms, courgettes, tomatoes, peppers, parsley, and broccoli. The sauce was made by mashing an avocado with some nutritional yeast flakes and sweet white miso, for a thick and creamy “cheese” sauce.
For dessert I made a tasty hot chocolate made using some Hershey’s Chocolate Syrup that I picked up from a shop specialising in American products. I also picked up some Reese’s peanut butter cups, which I tried last night. No explanation needed to describe how good these are! 😀
Speaking of American products I’ve finally made my order! I’m beyond excited about it. I’ve ordered those American basics such as PB & Co products and Artisana too. It’s funny that a treat for myself is now buying food rather than new shoes. Actually I can’t remember the last time I bought new shoes, must change that! There’s so many products that I want to try from the USA and there must be some products that you lovely Americans would love to try from the UK, although you do have pretty much everything over there. So jealous!
