Hi everyone! How’s your week going?  I think my pupils must have turned into squares by now.  I’ve been looking at a computer screen all day working on my poster for the conference in Florence next month.  It’s taken me two days and a lot of hours, but I’ve almost finished it- just the final tweaking to do to make sure it’s perfect before I send it top the printers.  Such a relief to know that it’s another thing crossed off my to do list! 🙂

My week got started with a tasty yoghurt bowl filled with Rachel’s Organic yoghurt, puffed rice, dates, carob coated raisins, raspberries and blueberries and some yummy peanut butter. 

I love my yoghurt bowls and I love Rachel’s Organic yoghurts, but I think I want to go back to soy yoghurts for a while.  I stopped eating soya yoghurt sometime last summer before starting the blog and I think now would be a great time to go back to it just for a change.  I do get bored with eating the same brands all of the time.  I’m the girl that rotates where I so my shopping because I get bored of seeing the same offers, staff and layout in the supermarket.  I’ve gone from Adsa to Tesco, back to Asda and last week I was racing around the aisles in Sainsbury’s.  I love to mix it up a little yah know?!?!

I decided to mix up my workout times a little too yesterday as I wasn’t in the lab.  I decided to fit my cardio session in before lunch.  I’ve never had a lunch time workout before, but it worked wonders for my energy levels for the rest of the day.  I didn’t even feel my usual 4pm afternoon tiredness.  It was an awesome sweat session made up of a cross country workout on the cross trainer, speed work on the tread mill and a quad busting workout on the bike, my usual abs and core workout.

After this morning’s yoga and toning workout I had a huge bowl of refreshing melon mixed with some grapes, raspberries and a kiwi alongside some toasted quinoa and amaranth rye bread half topped with some cacao bliss and the other half cashew nut butter.

Fab! 🙂

This salad was like sunshine on a plate and was the perfect lunch today since the sun has seemed to have disappeared from our lives in the UK again.  It included mixed leaves, bulgar wheat, half a mango, blueberries, cherry tomatoes, soya beans and chopped parsley, amazing!

Rather than cooking tonight I had the leftovers of a coconut and vegetable curry that I made the other day, but this time with steamed spring greens instead of the brown rice in the pic…

This was great and it was so nice not having to cook tonight, but still be able to have something tasty and nutritious to eat.  🙂

I’ve been eating a lot of iced based desserts lately,  mainly because of the hot and sticky weather we have been having.  Last night I made an ice cold mango and banana smoothie…

…so refreshing! 

Tonight I made a huge bowl of chocolate an peanut butter protien ice cream by mixing soya milk, 1 tsp of organic cocoa powder, 1 1/2 tsps of Hershey’s chocolate syrup, 2 tsps of xanthan gum, ice cubes, 1 scoop of pea protein powder, and a huge dollop of white chocolate wonderful.  It tasted amazing, very much like a peanut butter cup but in ice cream form.  I love protein ice cream! Other than the s and cream version I think this has to be another of my favourite flavours. 🙂
