Courgettes are not the most exciting of vegetables.  I mainly use them in stews, in chilli, as raw pasta noodles or for dipping into hummus. However, with the mix of right ingredients this bland vegetable can taste pretty fantastic.

At the weekend I put a huge pan of soup on the stove for lunches for the week. I had some courgettes in the fridge that needed using and some homemade chicken stock so it seemed perfect to use them in a soup.


3 courgettes chopped

2 cups of spinach

1 clove of garlic sliced

2 tbsps. of green pesto (I used Zest pesto)

1 litre of chicken or vegetable stock

juice of half a lemon

First heat a little oil in a pan and sauté the chopped courgettes until tender.  Add the spinach, sliced garlic and lemon juice and cook until the spinach has wilted. Place the cooked ingredients in a blender to which you should add the chicken stock and green pesto of your choice.  Blitz the ingredients in a blender until the desired consistency is reached.

I’m not really one for soups in warm weather but this is very light and quite refreshing, especially with the addition of the lemon.  I really like adding raw sunflower seeds as a healthier option to croutons on mine for some added crunch.
