Happy Friday! Hope you all had a great week.  It’s been a lovely week for lots of little reasons. Firstly, I took the picture above on my train journey into London yesterday. The sky was a blush with pinks and reds, it almost looked a gorgeous sunset rather than sunrise.  Natures beauty always astounds me and shocks me in light of some of the recent natural devastation’s around the globe.

Secondly, I’ve only been able to eat breakfast at home once this week.  It’s been desk breakfast nearly all of the way.  I much prefer eating my breakfast in the comfort of my own home, but needs must.

This little jar put a big smile on my face! It transformed my very plain, sad, looking-sorry-for-itself porridge into a something really delicious.  It wouldnโ€™t be Christmas without having sweet mince meat oats and this really hit the spot and brightened up my morning.  In fact I’m going to be doing a little experiment with this jar of sweet mince meat over the weekend.  Hopefully I can share all with you soon if it turns out ok, fingers crossed.

Also, I’ve been eating some fabulous food this week.  I love food, so eating tasty dishes always put a smile on my face.

I’ve been eating this soup that I cooked on Sunday on repeat for lunch this week.  It’s pretty basic in its ingredients but tastes lovely.  To make the soup I roasted a kabocha squash whole then took all of the skin off and in a pan I fried off some onions.  I blended the squash and onions with some jerk paste and coconut and then simmered it on the stove to warm through….mmmmmm!

Dinner has been a little bit repetitive too, but still fab! After our successful a few weeks back I couldn’t resist slow cooking some vegetarian chilli using a mix of different beans.
I had this with cauliflower rice (loving this right now), grated cheese, Greek yoghurt, and avocado.  Salsa would have made it on to the list too, but we were all out.  Alfie had exactly the same as this but with white basmati rice.  I think I’m going to have to write a post on our different eating habits and how I adapt meals to suit both our preferences.

On Sunday I fancied something a little different for breakfast after my workout. I defrosted some low carb bread from LivLife and served it toasted and buttered. Then I scrambled three eggs to get my protein fix and of course there was ketchup.

Like I mentioned earlier I’ve been having my breakfast at my desk mainly, but I did fancy a change of scenery and ended up having a green smoothie in my car, classy!

This was a pear and spinach smoothie.  It actually filled my beaker twice and a bit over.  I managed to drink the first half at home as I was getting ready and the other in the car on the way to the train station.  I felt really good after this, yum.

Iโ€™m really ready for this weekend, itโ€™s been quite a tiring week.  There is going to be lots of down time, Christmas related fun, and some Christmas recipe testing too, yay!  We are getting the Christmas decorations up over the weekend so that we can really get into the full swing of the festive season.
