Making my own protein snack balls has become a bit of an obsession of mine.  I love to whip up a batch at the weekend so I know that I have a healthy snack to turn to, instead of the biscuit tin during the week.  I’m very much about balance, it’s the running theme of this blog so when I do have my hands in the jar I know that it’s OK because I generally eat pretty well. 

Snacking healthily is always something that I’ve struggled with as sometimes even the snacks that are labelled healthy are laden with additives and sugar.  I’ve made a real effort to discover new healthy living brands that offer nutritious and tasty snack options and think I have a nice collection of go-to snack bars that never disappoint.  

Let’s face it, buying snack bars isn’t cheap and certainly a luxury in my eyes. I really enjoy making my own snacks to mitigate the blow of buying them on my bank balance.  This way I think that when I do buy myself a couple of bars from the health food shop it feels more like a treat.

Lemon Macaroon Protein Balls

An easy snack recipe that delicious and healthy and can be made in minutes.

  • 1/2 cup cashews
  • 1/4 cup shredded coconut
  • 1 scoop vanilla protein powder
  • 2 tbsp coconut oil
  • 3 tbsp lucuma powder
  • Zest and juice of 1 lemon
  1. Place all of the ingredients in a food processor and blitz until a crumbly texture forms.
  2. Take tablespoon portions of the mixture and roll in to balls.
  3. Allow them to stand in the fridge for 30 minutes to firm up.
  4. Enjoy with a cup of tea and try not to eat them all in one go!

These store really well in the fridge for at least a week - they can also be frozen.

I’m a complete coconut addict so these were really on point for me and I know that they will be for all you other coconut lovers out there too. They’re incredibly easy to make and really pack a punch in the flavour department – they taste like dessert. 

Knowing that I have delicious healthy snacks on hand, homemade or shop bought means I know that I’m nourishing my body the best way I can when I’m busy or away from home.  These are grain-free so will be perfect for celiacs and since they taste like dessert they go perfectly with a cup of tea for a guilt-free snack.
