One of my favourite types of food to eat when the warmer weather hits is Mexican food.  With all the spices and zesty flavours, it just sings summer to me and I love how casual and unpretentious the food can be.  The cuisine is all about good honest friendly food that tastes delicious.  

Loading all of my favourite foods into a wrap and then diving right in head first is fantastic! I get to experience the foods that I love in one mouthful and Mexican food is just bursting with flavour so it’s great to eat this way.  

Mexican Chilli Bean Wraps

Ingredients
For the bean wraps
  • 400 g black beans
  • 400 g red kidney beans
  • 400 g chopped tomatoes
  • 1 onion sliced
  • Tortilla wraps
For the taco Seasoning
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • salt and black pepper
  • alternatively use 1 sachet of ready-made taco seasoning
Optional add-ins
  • Avocado
  • Cherry tomatoes
  • Cucumber
  • Grated cheese
  • Salsa
  • Greek yoghurt
  • Jalapenos
  • Mixed salad leaves
Instructions
  1. To make the black bean taco sauce, first fry off a sliced onion in pan until tender. Add the kidney beans and black beans as well as the chopped tomatoes and taco spices or a sachet of taco seasoning. Simmer on a low heat for 20-30 minutes.
  2. Warm the tortilla wraps in the oven for a few seconds and start making your delicious wraps. Pile up the beans with some of your favourite add-ins to create a wonderful wrap full of the taste of Mexico.

Even if you’re, not a confident cook, these wraps really suit the entire spectrum of cooking skills.  They also make a great dinner party option as it looks like you have gone to an enormous amount of effort when really there is very little cooking involved.  You can just lay everything out in bowls on the table and everyone can help and please themselves.

These wraps are purely vegetarian and of course you could add a meat-based chilli, however, the black beans are a great source of protein are really filling, especially after everything else is loaded into the wrap.  

They’re also a perfect way to reinvent and use up any type of leftover chilli without going to any extra effort other than selecting your favourite add-ins like salsa, grated cheese, avocado, sour cream, salad (the list is endless!) to personalise your Mexican Chilli Bean Wraps to how you like them.
