Looking for some breakfast inspiration that is full of the flavour of Christmas, feels indulgent but really isn’t? Well, look no further because I’ve got you covered with today’s recipe. Not only does it contain one portion of your 5 a day it’s also refined sugar-free too.  

As a newbie to the waffle making world, I’ve fallen head over heels for them!  Like pancakes, they make the perfect leisurely breakfast and are so simple to create.  With their toasted golden outside and light and fluffy inside, it was no wonder that I was going to become a waffle junkie in a flash.  As I’ve quickly discovered there are so many different variations that you can make and this recipe is full of cinnamon spice that make them the perfect festive breakfast. 

Cinnamon Maple Sweet Potato Waffles

Fluffy waffles full of warm festive spice and sweet potato - the perfect healthy festive breakfast treat!

  • 1 cup of mashed sweet potato
  • 1/4 cup wholegrain spelt flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 eggs
  • 2 tbps maple syrup
  1. Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).
  2. Stir all the dry ingredients together in a bowl and then beat in the maple syrup and eggs until smooth.
  3. When ready, pour the batter into the the waffle maker and cook.
  4. Serve with your favourite toppings including more maple syrup and enjoy!

Now I love pure indulgence, but I also enjoy eating my vegetables too and feel satisfied knowing that I have achieved or surpassed my 5-a-day quota.  Sweet potato in the batter adds moisture to the baked waffles which helps them become light and fluffy.   I like to feel like I’m getting more bang for my buck where my food is concerned and mixing vegetables into sweet treats to make them healthier is always a winner!

At this time of year, I tend to overdose on cinnamon, it’s one of those spices that taste great on anything, both sweet and savoury.  On my porridge, in my smoothies, in my lamb tagine, crumbles, cakes, sprinkled on chopped apple December is the month when I need to have shares in a cinnamon farm.  Also, it just wouldn’t be the same if I didn’t have a bottle of maple syrup in the cupboard.  Cinnamon and maple syrup are such amazing combination, but feel free to play around with the flavours, the possibilities are endless.
