Love berries and citrus flavours together? Me too, and I have the perfect recipe for you today – even better if you love breakfast too because I have another waffle recipe for you. Since posting my recipe, I’ve tried out different variations and this one is one of my favourites.
Waffles have become the new pancakes in our house and they make the most wonderful weekend breakfast. Unlike pancakes, the waffle iron does all the work for you making them the perfect lazy breakfast, other than making the batter and filling your belly you don’t have to do anything!
- 2 cups wholemeal self-raising flour (240g)
- 2 eggs
- 2 cups almond milk (480 ml)
- 2 tbsps maple syrup
- 1/4 cup vegetable oil (60 ml)
- 1/2 cup blueberries (50g)
- zest of 1 lemon
Set up your waffle maker as per the manufacturer's instructions (I used the Belgian waffle setting).
Stir all the dry ingredients together in a bowl and then beat in the maple syrup, almond milk, coconut oil and eggs until smooth.
When ready, pour the batter into the the waffle maker and cook.
Serve with your favourite toppings including more maple syrup and enjoy!

Oh, the whole berry and citrus thing is a complete obsession of mine. I really like how the lemon zest brings out the flavours of the blueberries, which tends to be my favourite combination. I know blueberries aren’t in season right now, but you can use frozen, or if they’re not your bag sub in something else and experiment.

In this recipe, I used wholemeal self-raising flour because it’s all I had in the cupboards, but you can easily make this recipe gluten-free by using alternative flour options. Also, I’m pretty sure that you could use the same recipe to make pancakes if you don’t have a waffle iron – I would love to know if this works if you give it a try!
