Kick off your weekend with a leisurely brunch, a perfect excuse to catch up with friends or family after a busy week at work. However, rather than heading out to your local delicious hotspot, why not try to whip up something at home? It doesn’t have to be overly complicated either; these blueberry cinnamon ricotta waffles are so easy and can even be made into pancakes too.

Waffles at the weekend have become a tradition in our house and even though going out for brunch is a lovely treat there is nothing better than sitting around the table with the family with something that you’ve made yourself.  There’s something relaxing and leisurely about a weekend brunch, a chance to have a lie in and catch up on some sleep and then waking up to the smell of something scrumptious cooking in the kitchen is really wonderful. 

Blueberry Cinnamon Ricotta Waffles

  • 3 eggs
  • 125 g / 1/2 cup ricotta cheese
  • 480 ml /2 cups almond milk or milk of your choice
  • 240 g /2 cups self-raising flour
  • 2 tsp cinnamon
  • 50 g /1/2 cup blueberries
  1. Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).
  2. Beat together the eggs, almond milk, ricotta and cinnamon until combined and then pour into the flour in a large bowl. Mix together until completely smooth and free from lumps.
  3. Gently fold through the blueberries.
  4. When ready, pour the batter into the the waffle maker and cook.
  5. Serve with your favourite toppings including maple syrup and enjoy!

The batter can be used to make American-style pancakes. Can be frozen after cooking.

Normally, a typical waffle recipe asks for the use of butter, not that there is anything wrong with that, but this time I swapped the butter for ricotta that is lower in calories and makes the waffles super fluffy on the inside – just how I like to eat them!  Cinnamon is just perfect for this time of year and I love how it tastes mixed in with the juicy blueberries. Of course, lashings of maple syrup poured over the top is a must.

Taking your time over breakfast is such a treat, especially if you’re usually running out the door with breakfast in your hands on the way to work.  If this is you, then a leisurely brunch at the weekend is a must and definitely well deserved. I think that waffles are the ultimate weekend breakfast or brunch and if you don’t own a waffle maker you can easily transform these into blueberry American-style pancakes instead.
