A comforting lazy breakfast, that’s so straightforward to create that it suits all levels of cooking. If you’re dreaming about breakfast in bed, but your partner isn’t the best of cooks then these smokey chickpeas served on toast is a must see so they can surprise you with a lovingly made breakfast, which actually only takes minutes to make.
A luxury breakfast in bed is a fantasy to me, mainly because it never happens. I wish it did, but with an early riser for a toddler who’s bouncing off the walls as soon as his eyes open, I have no option but to get out of bed. Although the reality is I’d rather crawl under the duvet for a bit longer. Plus, there is the minor issue that Alfie isn’t the keenest of cooks, he’d happily put a cinnamon bun on a plate and make me some tea, but I highly doubt he would cook something from scratch.
Beans on toast are as simple as it gets for a cooked breakfast, it’s comforting and cosy – perfect for lazy breakfast in bed. I’ve upgraded it slightly and used chickpeas to make my version, it’s effortless but because it’s cooked from scratch you know that some effort went into creating it.

- 1 tin of chickpeas, drained
- 1 tin of chopped tomatoes
- 1 tbsp tomato puree
- 1 red onion, finely diced
- handful of chopped coriander
- 1 clove of garlic, minced
- 1 tsp smoked paprika
- salt and pepper
- 2 tbsp rapeseed oil or any oil of your choice
- Bread to make the toast
In a pan, heat the oil and sauté the onion for a few minutes before the adding the garlic and stir through.
Stir in the tomato puree and cook out for a few minutes until the pan is almost dry. Pour in the chopped tomatoes, drained chickpeas, and smoked paprika. Bring to a simmer the turn down the heat and cook for 8-10 minutes until the tomato sauce thickens. Season with salt and pepper.
Toast the bread before serving the smoky chickpeas on top. Scatter with freshly chopped coriander. Enjoy!
I’m obsessed with interiors at the moment since moving into our new house, with it being such a blank canvas it’s so hard knowing where to start. Adding sweet and smokey paprika to the thick sauce really lifts the flavour of the tomatoes and is a simple addition that really changes the flavour of the dish. The chickpeas only take 15 minutes to make, which means that whatever your level of cooking skills you can whip up breakfast in bed for your loved one – go on surprise them!
