A traditional steamed pudding recipe with a citrus sponge and topped with sweet raisins – a comforting dessert from the Snowdon region.

  • 100 g vegetable suet
  • 3 eggs
  • 15 g cornflour or ground rice
  • 50 g fruit sugar
  • 100 g gluten free breadcrumbs
  • 50 g raisins
  • 75 g lemon Marmalade
  • Grated rind 1 lemon
  1. Mix all the dry ingredients together in a large bowl, except for a handful of raisins
  2. Beat the eggs and add to the dry mixture
  3. Grease a pudding basin and put the handful of raisins at the bottom
  4. Pour in the mixture and boil/steam for 1 1/2 hrs, checking the water level from time to time
  5. Turn out and serve with a white sauce, lemon sauce or custard.
