  • 1 tbsp coconut oil
  • 2 garlic cloves , minced
  • 1 thumb size piece of ginger , grated
  • 2 tbsp honey
  • 2 tbsp dark soy sauce
  • 1 red chilli , sliced (deseed if preferred)
  • 2 cups Iceland jumbo prawns
  • 2 cups Iceland baby corn and sugar snap peas
  • 1 cup Iceland quick cook sliced mixed peppers
  • 2 courgettes , spiralised
  1. Heat the coconut oil in a large pan or wok.
  2. Pour in the frozen baby corn and sugar snap peas and stir in the ginger, garlic and red chilli and cook for 3 minutes.
  3. Add in the peppers, prawns, honey, soy sauce and cook for a further 5 minutes.
  4. Next add the zoodles into the pan and mix through so everything is evenly distributed. Cook for a further 2 minutes, making sure the prawns are cooked through.
  5. Serve and enjoy.
