Courgetti with Avocado & Feta Sauce

A healthy and delicious alternative to pasta with a super creamy avocado sauce full of healthy fats.

Ingredients
  • 1 courgette
  • 1/2 an avocado
  • 2 tbsp of Greek yoghurt (I used full fat)
  • 2 tbsp of feta cheese
  • 1 tbsp chopped basil
  • Juice of half a lemon
  • A splash of almond milk or water
  • Seasonings
  • Cayenne pepper (optional)
Instructions
  1. Create the courgetti using a spiralizer or speed peeler and place on your serving plate or in a bowl.
  2. In a blender, whizz up the avocado, Greek yoghurt, feta cheese, lemon juice, basil and seasonings until smooth.
  3. If you are having trouble bringing the sauce together add a splash of almond milk or water to help it along.
  4. Once the sauce is ready pour it over the courgetti and add a pinch of cayenne pepper for some heat.
  5. Enjoy!
Recipe Notes

If you don't have a spiralizer you can use a speed peeler to create courgette ribbons.
