Orange, Blueberry Vanilla Protein Pancakes

Gluten free pancake recipe that packs a deliciously healthy protein punch!

  • 1 cup buckwheat flour
  • 1 tsp gluten free baking powder
  • 1 scoop of vanilla protein powder
  • 1 cup almond milk
  • Zest of 1 orange
  • 1/2 cup blueberries
  1. Whisk together all of the ingredients except the blueberries in a bowl until the batter is smooth.
  2. Stir in the blueberries gently so that they don't burst.
  3. Add more milk if you want a thinner batter or more flour if you need it to be thicker.
  4. Heat a little oil in a frying pan and pour in some of your batter.
  5. When bubbles appear on the surface of your pancakes it means that they are ready flip.
  6. Flip the pancakes and cook on the other side for a few minutes and repeat until all the batter is used up.
  7. Sprinkle and add your favourite toppings and enjoy!
