Peri-Peri Socca Pizza

A simple and healthier alternative to pizza!

Ingredients
  • 1 1/2 cup gram flour
  • 1 cup water
  • 1 red pepper
  • 1 courgette
  • 1 spring onion
  • cheddar cheese grated (optional)
  • 2 tbsp Greek yoghurt (I used full fat)
  • 1 1/2 tbsp peri-peri seasoning
  • Sqeeze of lime juice
  • red kidney beans
Instructions
  1. Chop the red pepper and courgette and coat in 1 tablespoon of the peri-peri seasoning and roast in the oven until tender. Meanwhile mix the gram flour and water together to make a thick batter. Heat up some oil in a frying pan until very hot and pour in the batter. Cook on one side until bubbles appear on the surface, this means that it's ready to flip and cook the other side. Whilst the other side is cooking, stir the remaining peri-peri spice into the Greek yoghurt with a squeeze of lime juice.
  2. Once the socca pizza crust is cooked place on a plate and top with the peri-peri infused yoghurt. Spread over the vegetables and scatter with red kidney beans, grated cheese and spring onions. Eat and enjoy
Recipe Notes

It's important that the frying pan is super hot before adding the socca crust batter to cook to get the perfect crust.
